RAW Mango Tarragon Burger

1 c sprouted sunflower seeds
1 c walnuts, soaked and dehydrated
1 mango, ripe
1/4 c fresh tarragon, lightly packed
1/4 c flax meal + 1/2 c water
1 clove garlic
salt and pepper to taste

Combine all ingredients in food processor until smooth. Stir in:

1/2 c coconut flour

Form 4 inch patties and place on mesh dehydrator sheet. Dehydrate at 110 degrees for 2-3 hours until outer edges are slightly dry. Serve with spicy horseradish mustard, avocado and arugula.

yield: approximately 9 patties

Coconut nectar balsamic brussel sprouts

COCONUT NECTAR BALSAMIC BRUSSEL SPROUTS

2 lb brussel sprouts, stems trimmed and halved

1 red onion, sliced

1-2 T olive oil

1 T balsamic

1 T coconut nectar

Sea salt to taste

Begin by caramelizing onions in a hot pan with olive oil and salt. Add in brussel sprouts and cook until bright green in color. Do not overcook, brussels should be slightly firm. Toss in balsamic and coconut nectar and sauté for another minute. Serve immediately.

Rosemary Mac n Cheese Bites

ROSEMARY MAC N CHEESE BITES
1 package gluten-free macaroni (16 0z box)
1 package follow your heart mozzarella cheese, shredded
2 T flax meal + 1/4 c hemp milk
1 T olive oil
2 T fresh rosemary
salt and pepper to taste
extra flax meal to garnish

1 dozen cupcake wrappers + tray

Preheat oven to 375 degrees.

Prepare pasta according to box directions. Toss prepared pasta with olive oil and flax- hemp milk. Stir in cheese, salt and rosemary. Spoon into cupcake wrappers and dust with flax meal. Bake at 375 degrees for 30 minutes or until cheese is melted. Allow to set for 5 minutes before serving.

Quick tip: For adults, I like to substitute the mozzarella with 1 c raw cashew cheese.
